Total Time 15 minutes
Servings 24 servings

Ingredients

  • Ritz crackers (1 standard sleeve or more, depending on batch size)
  • Peanut butter (creamy works best; about 1/2 cup for a sleeve of crackers)
  • Chocolate for coating: 12 ounces chocolate chips or melting wafers (semisweet, milk, or dark)
  • 1–2 teaspoons coconut oil or vegetable oil (optional, for smoother dipping and shine)
  • Toppings (optional): Flaky sea salt
  • Sprinkles
  • Crushed nuts
  • Crushed peppermint
  • Drizzle of white chocolate
  • Alternative fillings (optional): Almond butter, cashew butter, or sunflower seed butter
  • Marshmallow creme
  • Caramel sauce (thicker, soft kind)

Instructions

  • Prep your station. Line a baking sheet with parchment paper or a silicone mat. Set out your crackers, peanut butter, and toppings so everything is within reach.
  • Make the cracker sandwiches. Spread about 1 teaspoon of peanut butter on a Ritz cracker. Top with another cracker to make a sandwich. Repeat until you’ve used all the crackers you want.
  • Melt the chocolate. In a microwave-safe bowl, add the chocolate and coconut oil (if using). Microwave in 20–30 second bursts, stirring between each, until smooth and melted. You can also use a double boiler on the stove over low heat.
  • Dip the sandwiches. Using a fork, dip each sandwich into the chocolate. Tap the fork gently on the side of the bowl to let excess chocolate drip off. Place the coated sandwich on the prepared baking sheet.
  • Add toppings. While the chocolate is still wet, sprinkle with flaky sea salt, nuts, or decorations. Work in small batches so the chocolate doesn’t set before you finish topping.
  • Let them set. Refrigerate the tray for 15–25 minutes, or until the chocolate is firm to the touch. If your kitchen is cool, you can also let them set at room temperature.
  • Optional: Add a drizzle. Melt a little white chocolate and use a spoon to drizzle thin lines over the set crackers for a bakery-style finish.
  • Serve or store. Enjoy right away, or transfer to an airtight container for later.
